This is Spanish, Category 1 saffron of the highest quality. True saffron consists of only the stigmas of a single species of crocus (Crocus sativus) that is native to southwest Asia. Each flower bears only three vivid red stigmas that must be picked by hand. Harvesting a pound of saffron requires up to 75,000 flowers and at least 20 hours of labor by experienced pickers. Because saffron is so labor intensive to grow, collect and process, it is the most expensive spice by weight.
Despite its price tag, saffron is truly worth the expense. There is absolutely no substitution for its unique earthy flavor and rich color. Use in Persian, Mediterranean and Arabic dishes as well as the classic Spanish seafood dish paella.
