True cinnamon comes from the bark of a small evergreen tree native to Sri Lanka (formerly known as Ceylon). Much of the commercially available “cinnamon” actually comes from several different closely related species. Though once thought of as inferior to true cinnamon, it is more accurate to say that other varieties simply have different flavors.
