Our premium Korintje (Indonesian) cinnamon is a couple steps up from what you might find in the grocery store with a full 3% cinnamon oil content. Not just for baking, cinnamon is an important ingredient in many savory dishes and can add heat and depth to spice blends and rubs. This variety of Cassia has the classic "cinnamon" flavor that most people are used to.

True cinnamon comes from the bark of a small evergreen tree native to Sri Lanka (formerly known as Ceylon). Much of the commercially available “cinnamon” actually comes from several different, though closely related Cassia species. Though once thought of as inferior to true cinnamon, it is more accurate to say that Cassia varieties simply have different flavors.

Spices and herbs should be stored away from light, heat and moisture. However, storing spices in the refrigerator or freezer may actually shorten their shelf life and they risk picking up other food odors. In general, whole spices have a longer shelf life than ground spices. Depending on the spice and how well it is stored, a good rule of thumb is six months to a year for powdered spices and longer for whole spices and seeds. The best way to determine if your spices or herbs are still fresh is to close your eyes and sniff – if you cannot immediately tell what the herb or spice is, toss it!
