A high grade of Ti Kuan Yin (also called Iron Goddess of Mercy) from Fujian, China. Gentle and highly aromatic, this has a greener and more floral flavor than the Ti Kuan Yin Fine. It brews a light yellow-green cup and will easily yield three infusions.
Oolong tea comes from the same plant as black, green and white teas and only differs in the processing. Some oolongs are quite dark while others brew up quite light. The color of the leaf and cup depends on how long the leaves are oxidized but, as a rule, they are lighter than black teas and darker than green teas. Oolongs are also known for yielding many infusions from the same leaf, sometimes as many as four.
